COMMUNITY NUTRITION (NUTR 430)
Under the direction of Ms. Saundra Lorenz, we explored the various aspects of community nutrition. Beginning with the basics of public health, we discussed and learned about National Nutrition Monitoring, how to perform a community needs assessment, the differences in food security and insecurity, governmental nutrition policies, and US programs to stop hunger such as SNAP and WIC. We also had the privilege of listening to numerous speakers on programs in Texas that were put in place to teach others about nutrition, such as AgriLife's Expanded Food and Nutrition Education Program. Below are projects complete during this course, including a community needs assessment for a Texas county with a proposed plan, a week-long simulation of living off food stamps, and a research paper on possible food limitations for SNAP.
